During Quail season it is important to know how to properly clean your game birds to ensure that they can be properly prepared later on. There are many ways to clean a bird, but we have found this method to work best. Begin by clipping off the wings in close to the breast, the legs just above the knuckles, the head, but leave plenty of neck, and cut the tail in close to the body as well. This allows you to skin the bird easily and not get hung up on bone structure while keeping the breasts and legs in one piece. Once you have skinned the bird, cut the legs off as close to the back as you can to maximize the meat. Once you have removed the legs, take the extra neck that you left on the bird and pull back. This should remove all the innards while keeping your hands clean. Once you have removed the innards, your bird is ready to go!
